    As long as it's a big enough starter so as not to be oversaturated. Do you have a stir plate or will you be manually shaking? How can you tell?

    I actually really like Lee Mack and think he's very funny on WILTY, so I was shocked at how bad NGO is. It's like the horrible fake sitcom from Extras.

    That's interesting, in contrast to Hazelwood's beer yesterday, your recipe has a lot more crystal than expected. Demonstrates how much the hops disguise the grainbill. Lovely beer though, thanks again. I'll get a couple sent in return after the holidays acheers.

    My goto is WLP655, it's also the one recommended by Jamil which is a pretty good endorsement. If you can get ahold of a good commercial gueuze then adding the dregs (along with the 655) might add a bit of complexity too.

    I believe the cloudiness is due to a reaction with calcium rather than the alkalinity, but as long as the pH is sufficiently low it's likely not a problem.
