I'd imagine you're right and it's egg powder and therefore more akin to a thickener than actual egg. Might end up with a richer mouthfeel with no actual egg flavour.

Couldn't you just boil hops in water? Again forgive my ignorance but isn't the presence of sugar/malt/adjuncts redundant? In AG aren't you boiling for reduction of wort and sanitation. With x hops at x min intervals surely you're just getting different levels of bitterness and oils irrespective...

Pardon my ignorance but could you not just add boiling water to LME in the FV rather than boiling at all. If everything is sanitary isn't boiling LME unnecessary?

I use the mineral water for pale ale/lager kits and the container for wows. I don't bother with an air lock I just don't screw it too tight. I use the chippyt method of only making it up to 4l then top up after first few days. Not had a foam over yet touch wood!
