    Sodium carbonate does exist, it's washing soda. I have a big bag of it under my sink. I wouldn't put it in beer, though.

    All I can, say, Jim, is that there are absolutely no off flavours in the beer I'm drinking right now, a couple of months in the bottle. And it still smells lovely!

    The last bottle of weissbier (bar one that I'm keeping for my son's visit in a few weeks). Still tastes nice and smells great. Will make again, cos it's easy. BeerCat's no chill, no boil simple recipe, plus a bit of tangerine peel and coriander.

    Oatmeal stout coming good now. I've remarked before that no-one seems to use oatmeal in oatmeal stouts, just porridge oats and/or naked oats. This one is porridge oats and naked. So smooth, it just goes down all too easily!
