    Gelatin

The reason I do it in the keg after chilling for 24hrs or so is to avoid the potential oxidation. The only time I have ever cold-crashed I had an oxidised brew because presumably oxygen came in through the airlock after the CO2 from fermentation dissolved in the beer.

    Gelatin

I recently used it for the first time in a lager. I added it to the keg (are you kegging?) after transferring and chilling overnight. Ive never had such a clear beer. I used half a teaspoon in 200ml water if I recall correctly.

non fridged stout maturation on Nitro - can it be done

That'llbe absolutely fine. It won't reach desired carbonation until refrigerated but from what you've said, that shouldn't be a problem.

    Bought myself an Easter present

Bottling a Quad - should I have added yeast?

I just bottled a quad (came out a little low at 9.8%). Just cleaned up and it occured to me, should I have used yeast for bottling too as it's a strong beer? I guess I'll find out in a year or so, but anyone think it'll be ok? I'm worried it won't carb.

    Beer taps and towers.

Similarly, having used both types, I would go with the NukaTap option.

    Gas Ball Lock

Which do you currently have? What makes you think they're past their best? Have you checked the o-rings on the post to see if they are the cause of any issues you may have found? I don't have any metal ones myself. I have had a grey/red KegLand one leak at high (40psi) pressure.

    Keeping CO2 level...

Personally, I leave gas connected having checked for leaks with a spray bottle. It's not difficult to detect or resolve leaks if found. That way you.can hook it up to gas and forget about it.
