    How long do you roll it about for? How long do you have it at 20psi and 4 centigrade? From what I have read it needs to be more than 20psi for rolling and nearer 10 for serving. I don't bother with rolling, I just set at about 10 to 15 psi (depending on how much carbonation I want) and leave...

    Where do you put the temperature probe? Presumably not attached to the fermenter or in a thermowell

    Diluted Starsan last a long time diluted with tap water. If you are concerned then check the pH. If it is under 3:it is good. Don't worry if it has gone cloudy. If distilled water had anything added then it wouldn't be distilled water anymore.
