    Kefir anyone?

I was making Kefir for about 6 months but stopped as it got to be a bit of a chore keeping up with the cycle of draining the grains and adding them to a new water/sugar solution every 3 days or so. I added pure fruit juice which makes a fantastic drink as a tonic in the mornings, great for your...

    Dry hopping techniques

Pellets I chuck in loose on around day 10 once fermentation is finished, they drop out with all the trub after cold crashing. Whole hops are more problematic as loose they will sit as an immovable raft so I tend to keep them solely for the boil. If I do dry hop with cones I find best way is to...

I've never had a successful brew with a MJ yeast

MJ54 is often listed as a sub for Wyeast 2112. It's the best of similar options for steam beers and pseudo pilseners in my experience, far superior to Novalager (which is also unsuitable in some recipes due to its high attenuation).

I've never had a successful brew with a MJ yeast

Aren't they all repackaged yeasts by other brands such as Lallemand and Fermentis any way ?

I've never had a successful brew with a MJ yeast

I like MJ54, for Cali Commons and more recently a Steam Pilsener which turned out lovely. Also used MJ84 for a genuine lager with German hops which also worked really well. Never had a problem with attenuation using either 🤷‍♂️

What are you drinking tonight 2024.

Nearly at the end of this Vienna lager, just a small 10L batch I made as a user upper but one I'll be brewing again. Not usually a big drinker of hazey beers but this single hop Vic Secret pale ale is right up my street, lovely bitter grapefruit and pineapple fruitiness.

    Demijohn unable to clean.

I can remember my mum cleaning out glass bottles with loose lead shot from a shotgun cartridge, swirled round in some sort of light scouring solution.

Day 3 at the festival and down to the last can. Poor choice from the bars on site - best option is Korev lager. On gin and juice tonight to see the final acts, last night was Leftfield who brought back a few 90's raving memories.

    IPA using Voss ?

I recently made an IPA with Admiral, Challenger and Verdant. It's a good combination for a definite fruity orange taste and aroma.

What are you drinking tonight 2024.

Kegged this Admiral & Challenger IPA a week ago and still clearing but tastes promising. Surprisingly fruity aroma and taste, I was expecting some orange from the Admiral but the Verdant yeast plays a bit part in this I think. Original recipe was an Archer IPA, but had to change plans mid brew...
