    Yes Hops are a very very versatile and vary so much, messing about with hops in home brews is like a hobby within a hobby in my opinion

    I once had an old tin of golden syrup in a kitchen cupboard had sat there for years as I flipped the lid it hit the ceiling to my then children's loud cheers. just saying this could pop a bit when you puncture the can. I would think a lot depends on the temperature fluctuations over the years...

    Think your yeast (Safale S-04 Ale Yeast ) is a great yeast and this yeast normally drops down ok once it's finished. a tablet at the end of boil also helps as comments above have said

    Out of interest was the yeast the same on each brew? Yeast will differ in the way they ferment out . guess you are using Protafloc copper fining tablet / Irish moss. towards the end of boil. I control my brew temperature and try not to disturb it to much about day 9 I drop down to 7c until...

    Tea Time Christmas plastic biscuit containers works well for me, they stack nicely

    When the wine sort of tingles a bit on your tongue that's the co2 stuck in the wine I use a plastic de gassing stick as above on a battery drill loads of videos on you tube

    Adding more sugar

    I grow my own red grapes the sugar content of the grapes differ a bit each season this year they came in at 1080 once in the fermenter which is about right to me, last couple of years I added brewing sugar to get the starting gravity up to 1080 I suppose its horses for courses
