    Just one of those things that happens - but QC should have caught it, and would have at a more experienced brewery. But it's just terrible management to be pointing the finger like that, it just ensures that people keep quiet about any issues when you want them to be shouting about them.

    Sounds like it may be a few years old then? But one would assume that it's the equivalent of HDP malt - so a pretty boring, not particularly flavourful malt with lots of enzymes. It'll be fine as a base malt. You'd know if it was peated, it would smell somewhat smoky.

    Fermentis T-58 is a useful one in these situations, it's a cousin of Windsor that's mildly phenolic.     It's not that unusual, it's the default state of wild yeast and if you look at the Brewlab catalogue nearly half of their British yeasts have some kind of mention of phenolics. You can pick it up in a good pint of Harveys for instance.
