    2 options you can degass when racking most have a home made tool for use in a power drill (much quicker) or can vigorously shake it but takes a while other opttion is leave in dj with an airlock and let it settle and degass over time a few months

    I also leave wine on the dead yeast to fully settle out I found over racking changes the flavour and still get some sediment so now leave for a good period and before botting

    To go stronger you will need more sugar yes but also a yeast than can support the higher ABV and some form of nutrient. This also run the risk of being very dry and losing flavour, as long as active yeast adding more sugar will not sweeten the yeast will use it many are more expert than me...

    I find the Cooper type PET bottles work well and stuff never goes longer than 6 months in my house haha they are brown so less of an issue with light the Coopers one have an oxygen theif cap (better seal) easy to check when carbonated and the shape at the bottom is very good at catching settled...
