To clarify...whilst emptying to secondary I took some of the primary sediment with some liquid and it's fermenting slowly under airlock in a demi-john.
I have a bit of a dilemma - brewing a Belgian and moving to secondary which needs to sit on its trub and be cold conditioned at 4c for a month before bottling (which means the yeast will not survive?).

What's the opinion out there if your batch sparging and near the end of the second run (with maximum water used) the brix is 7 - do you 1. leave alone as your target is met 2. go boil the kettle real quick and squeeze some more wort till it falls to 4 (sg 1.016)? :wha:
I'd be inclined to start off with a stiff mix at 45c then add small amounts of hotter water (as 80+c) until you reach your target, and repeat the process till you reach your final stage temperature - worth a thought :thumb: ;)

To give you a good idea I've got an electrim emmersion heater which is 75 watts and that is geared up for standard 5 gallon brews - Moley's right about the set-up, though what I've done is instead of using my bucket I've gone for drilling a rubber bung and running the cable through this in my 4...
