    No new photos (I've mislaid my camera...), but did keg and bottle the stout yesterday. Tasted ready to drink without bothering to keg, frankly! I used natural priming and will now warm and cold condition until Christmas Eve. Ish. Stout and port anyone? Who's made cheese?

    Well that bright green has now turned into gold. My APA is now happy in secondary and is down to the target 1.018 from 1.058. I make that around 5.25% ABV, and will round up to 5.3% to account for priming. Smells fantastic, can't wait until New Year for this one.

    :nono: Hang on, hang on! Us soft southerners are the hop heads of the country! I think you'll find we love growing, brewing and supping hops nearly as much as you rock hard northerners love those little placcy beer pump showerheads which rip all the hop taste back out again... :party:

    It seems to be going very well to be honest, so just leave it as it is. In a few days you could just rack it to a keg and pop a bag of hops in there.     Your chiller will also be aided by the fact cold water is so bloody cold right now. US-05 is pretty ruthless. A secondary in a colder place rarely ferments more than a further point however. Nice recipe - are you tempted to dry hop some further Cascade?

    Yup. Could do. You'd have to bore out the holes a little as you wouldn't have the required pressure from an HLT, but it's a good shout.
