    Brew No 5, the TC

Ok, so I got bored again and picked up some cheap apple juice from the local shop. Sterilized everything and made a starter and set a side. Mixed in apple juice, 150g sugar (should seeit about 6.5%) , pectolase, nutrient, tannin and some acid mix into fv and after the starter was established...

    My Rubarb Brew....

So... Last weekend it seemed to get a bit stuck, so racked it, made another starter with youngs super wine yeast and also pitched some in dry. Also put on a brew belt two days ago to bring up the temp a bit ( was 18C now 22C). I'm not even looking at it for another week as its now blooping every...

    Brew No3 Cowboys Strawberry Ribena

Took a hydrometer reading tonight and its reading around 0.940 and still fermenting, shoudnt be long now till its done! Tasted it too and has a bitter taste to it, i'm thinking it might be too much tanin, or mibbbies just dead yeast as its yet to clear and a few other of my wines have a...

    average time for fermentation?

Hi everyone, I realise every brew is different with all the variables and that but was wondering if you guys had a rough idea of how long you would expect for an average fermentation to finish? Just very roughly, as I'm going to try and produce a rolling stock of but have filled up 5 gallon FV...

Brew No 4...Apple and mango wine

I did the same stevie, followed the wow recipe but used 1 carton of apple and 1 carton of mango. Mine has frothed up as well, creating a foamy skin on the top. From the other pics I've seen its nothing to worry about and should settle at the bottom eventually and become the sediment I think.

Brew No 4...Apple and mango wine

That one is a cowboy job mate, partially to see if I could create something that's drinkable from stuff I could get at the supermarket! But I left plenty of head space in the FV for the initial bubbling up, and the balloon was only put on when the SG reached 1.034, so what you are seeing there...

    Brew No3 Cowboys Strawberry Ribena

Update: That's it been fermenting for a few days now, steadily dropping by approx 0.008-0.01 per day so far. I tasted a wee bit of the juice today and must say though smelling really good it's lacking body and has got a weird nasty tang that I've never tasted before. I'm hoping still hopeing...

    Brew No3 Cowboys Strawberry Ribena

Awrite Folks, Apparently "everything comes to he who hustles while he waits" (Edison I think!) And seeing as I am waiting on my rhubarb brew finishing, I got a bit bored and decided to make another brew while I was twiddling my thumbs. I read Equaliser's post about strawberry Ribena wine (here...

    My Rubarb Brew....

Latest update: I've been desperately trying to leave this alone but I got a bit worried at the weekend that I'd added too much sugar to the must at the start so I put another 5l of distilled water in it at the weekend, and after a short while the bubbles going through airlock got faster. I'm...

    Buckfast-ish wine

Well, it's fortified and made from a mistella (which as far as I can tell is a red wine base). So possibly making it like a port might work.

    Settling

I too my be looking to quickly get a small batch ready at short notice. Would filtering the wine make a difference and produce a drinkable wine faster?

    Elderberries - an interesting idea.

Does bigger berries mean better fruit for wine though? I was watching a programe recently about wine makers and they were saying that the best wine grapes were smaller than the good eating ones, as the contained a more concentrated flavour, which ment they didn't taste good but were better got...
