Hi, my tap water supply has an alkalinity of 170mg/l, so I us AMS to reduce to an acceptable level. I use hot water from a direct water supply so I assume the alkalinity would be reduced, judging by the amount of scale in my old tank, does anybody have any idea by how much?

Hi, bought some Fantasia hops today on a whim . They're supposed to have a caramel taste? Anybody used them?

I've brewing all grains for a few years but there something missing. I just can't get that toasty, coffee, caramel taste that commercial beers have. I've tried adding all sorts of special malts in different amount but I still can't get that dry caramel taste. Any suggestions?
