    novice questions....

Hi all, can you help? Does quikclear clear hazy wine as well as solids? Should pectolase be added to all wines, and at what stage? Can you mix yeasts, and when bottling should it still smell of yeast? At what time do you take your first sg reading, prior to adding yeast? Thanks

    getting good head?

Evening all, excuse the smutty pun, but how do I get a good head on home brew beer? I've just finished my 2nd batch and as I'm a newbie I only put half a teaspoon of sugar in some bottles in order to see the difference. I have the Grolsch style bottles, they make a satisfying pop when opened...

    oak leaf wine

Evening all, I've seen reference to oak leaf wine on the internet, and today it was brought up in conversation. Has anyone tried it and have a recipe for it? I'm a little hesitant as I always thought oak was poisonous.

    fermentation in a bucket, why?

So, do you only need to ferment using a bucket if solids are present, such as grapes? I ask because I've just thrown supermarket apple juice into DJ's with yeast and off it popped, bubbling like a trouper.

    fermentation in a bucket, why?

Hi all, just getting into wine making and home brew beers, and now have a question. Why do we let the wine berries/fruit etc start fermentation in an open bucket before transferring to a DJ? Is this necessary for all wines?
