    Well I would be very disappointed to get banned from here Mr moderator but freezing alcoholic beverages and removing the ice to make it stronger is not illegal as far as I am aware, but it is not well advised ;) But it sure ain't "the D word", which is illegal.

    Potassium sorbate on its own will not stop it fermenting but adding a campden tablet as well will. Potassium sorbate should never be used on it's own as it can cause a geranium smell.

    A: Make up to 7 pints (for a gall batch) take an SG reading and divide it by 8 and then multiply it by 7. B: Pitch the yeast and put some into a bottle (no need to keep in the fridge) plug with cotton wool or what ever and add later ;)

    Yes that is the sort of thing but you would need 2 of them to make a half decent wine on it's own. There are larger tins and bottles available which work out better value and 500 ml will make a wine on it's own Link Or as you say, add tinned or fresh fruit, raisins, supermarket juice whatever.

    As said carrot is not a problem to clear normally and as far as I am aware they contain no pectin. I always fine before filtering as is recommended by the manufactures and it makes a big difference. The latest version of that filter has a vent in the top which greatly improves the performance...
