    New brewery. Thoughts and ideas.....

Duty with the 50% waver comes to just over 20p and VAT is another 60p. As for initial set up cost, the brewery itself could be anything from 10-30 grand depending how shiny it is. Haven't got to the stage of checking out conversion costs at the pub yet. But shouldn't be anything too structural.

    New brewery. Thoughts and ideas.....

Morning all. I originally posted this thread on another forum which looks to be more "commercial" based. But looking at the general view and post figures, there doesn't seem to be anywhere near the volume of traffic we get here. Anyway..... I've been working in Central London for far...

anyone know about green hops(first gold)

Sorry to hear it didn't taste nice. I tried a bit of my wort and it was flipping lovely. Although the hops were a complete pain in the **** to get rid of.

    slightly mouldy krausen.

I know what you mean. Or the stuff that grows in a glass of squash that's been left.

    slightly mouldy krausen.

Well I've made it now. The vast majority of work is done. It's not a lot of effort to fill 15-20 bottles. If it tastes fine, great. If it growls every time you go near it, I'll bin it. No biggy. Thanks for the advice chaps. Much as its nice to use wild fruit, I think next time I might just...

    slightly mouldy krausen.

Unfortunately I didn't think to take a pic. I was kicking myself afterwards. It was a light, fluffy white mould. Just in a few small patches. Didn't smell bad at all. It was quite a thick, dense krausen so I was able to skim it off pretty efficiently. I can't remember where I read it, but I...

    First AG BIAB Tomorrow

I hang my grain bag over a large pot to drain. It's pretty much done by the time the main pot is up the boil. Once that's gone in I occasionally try giving the bag a squeeze into the collection pot just to see how much comes out. But by then it's drained for about 30 min and significantly less...

anyone know about green hops(first gold)

I've got my first brew using wild hops on as we speak. From what I've read, the weight of fresh hops is roughly 5X that of dried due to the water content. Meaning that to get the same AA, you'd need 5X the amount. as a very rough rule of thumb. As the hops I've got are wild, I've no idea what...

BIAB batch #14. Beer from the wild frontier.

Today I'm brewing using the 750g of wild hops picked my my local landlord while walking his dog. 20L OG 1.055 4kg maris otter. 375G wild hops @ 60 min. 185G wild hops @ 15 min. 185G wild hops @ 0 min. irish moss @ 15 min. white labs 001 yeast. I've no idea what these hops are...

    slightly mouldy krausen.

Ok. I'm planning on drinking it over Christmas, so that should be fine.

    slightly mouldy krausen.

This is what I'm thinking. There's enough food out there (cheese, milk etc) which is mouldy, and things like lambics of course. obviously that's very specific mould. But might still be ok. I hope.....

    slightly mouldy krausen.

Morning all. I made a 20L robust porter the other week, bottled half of it and racked the rest over about a kg of blackberries. I'd picked them wild, washed them and then froze them until I was ready to use them. When I defrosted them I didn't boil them. Which I've found may have been a...

    BIAB batch No.12 Blackberry porter

That's true. I've been mashing colder in order to produce drier, stronger beers and have got used to FGs of 1.008 and the like. Sort of forgot that I designed this one to be much more full and sweet. Doh.....

    BIAB batch No.12 Blackberry porter

Hmmm. Now seems to be stuck at 1.020. Never had a stuck brew before. Given it a swirl. Is it possible and/or advisable to add more yeast?

    BIAB batch No.12 Blackberry porter

No. Apparently freezing should be enough. Weirdly, I've had absolutely no airlock activity or krausen whatsoever. I was assuming something was wrong. But I took a gravity reading this afternoon and it's down to 1.020. So the little yeasty chaps are clearly up to something.

    BIAB batch No.12 Blackberry porter

This is my 3rd BIAB batch and my 12th grain recipe. I'm slowly getting the hang of the BIAB setup and it's really good. Thanks to a new copy of "how to design great beers" I have been able to really design this batch properly and work out my efficiencies and things like tweaking OG for...

    Wild hops. When to harvest?

Cheers guys. Actually, that was the first shoe box I opened. The other two were much better. I sorted through them all and ended up freezing about 750g. Some a little brown around the edges, but mostly nice and green. And by the end my fingers were absolutely caked in the resiny, what...

    Wild hops. When to harvest?

The landlord of my local, (who I've had a long running discussion about commercial brewing with) has discovered a local source of wild hops. I walked into the pub this evening to a whole crop. I've no idea what they are, but they have a wonderfully citrus smell. And 1.5kg should make...
