Hi, I have been making kits for a year now and I'd like to start pimping them a bit more.
At present I use Simply lager and then add 1kg DME, 500g dextrose with a safale s-33 yeast.
This resulted in a nice flavour but a bit sweet and I'd still like more flavour and body.
I had tried doing this with a lager yeast previously but there seemed to be no flavour to it.

I was hoping someone could help me out with some details and or advice on whether the following is worth a try

Same Simply lager 1.8Kg kit, 1 Kg Light DME, 500g Dextrose as before. I was thinking to boil the DME with 20g of cascade from the start and add another 20g after 15minutes then leave boiling 15minutes in 2L of water.
Also steep 500g of carapils in 2L of water and add to the mix in making up the 23L in the fermenter and brew it with Safale T58 (I have one in the fridge).

This is pretty much a stab in the dark so any links, advice etc would be much appreciated.
