I've had no problems getting wine to the level but never really managed beyond. I sort of took that to mean that broadly all sugar has gone from the brew. I'm nearly always using Lalvin EC-1118 if thats important.

I'm asking as I'm on a keto diet where all sugars and carbs need to be strictly controlled. I also love wine 😭

Am I right in thinking that a wine fermented to 0.990 is like to be very low in sugar/carbohydrates?

When i started out we used to make supermarket juice wines and always used a hydrometer i can honestly say I don't remember ever getting a wine below .990 so yes at .990 there wont be much sugar left.

Whilst it will be low in sugar there will still be some residual unfermentable sugars and therefore carbohydrate. Wine is one of the better drinks though for a low carb diet though spirits are the best. You're typically looking at around 2.5% carbs in a white wine, maybe a bit less if its a really dry white like your home brewed sounds like.

Thanks guys. So broadly not too bad then.

I was reading elsewhere that alcohol itself also isn't great for keto as the body breaks it down for energy in a similar way to carbs but I didn't read it fully as I didn't like what it was saying 😂
