I have made this 3 times and on every occasion smells and tastes good, however loses both quickly. Any ideas? I do a closed transfer and prefer well.
 
How long you leaving it , iv just done a peroni / czeck type pilsner , i love both so tried nail best of both in one ,
Used hana malt and budva yeast
All done femented and put in keg let it sit forced carbing in keg for 2 weeks .
Tried it after 3 weeks cold keged and can say it best i ever made ..
Tried week later still good but slight change
4 weeks so on till now , the beer is still one best i made 100% but lost that sharp hay grainy punch hana gives still malty and lovly sharp saaz just lost the hay grain punch , i prefer it at 3 weeks where others like it now .

Could your fools gold be the same just better fresh .
 
Iv also been aging a belgian blonde since april this year . Will be tapped open end this month for a birthday
Hope iv not left two long ,
