Hi has anyone done this yet? I brought it and reading the instructions it says after bottling it , leave the bottles to condition at a low temperature 15°c . Now I normally do the 2+2+2 ie leaving the beer after bottling in a warm area then the cold stint . Bit confused now what to do.
 
so i think they are trying to "simulate" a kolsch by cold condioning a beer fermented with ale yeast. i doubt they include kolsch yeast in the kit since there is only one dry kolsch yeast and it is discontinued.

what i would reccomend is to 2 weeks primary, 2 weeks bottle carb (preferably 3) at room temp then "lager " it cold around 8 or 9 degrees for as long as you can stand the longer the better up to about 3-4 months. then it might lose some flavor etc.



basically make the beer carb it up then cold condition it

so i just looked its k97. i never liked that for a kolsch yeast. it doenst taste kolschy to me.

k 97 temp range is 59 to 68 so they are asking you to keep cleaning up the beer at 59 degrees with that yeast for a while.

i would still stick with "lagering" it cold for a while to condition it. that will make a clean beer.

Hi, So what would you recommend to use as a yeast. I normally just leave my brew in the garage to cool , I only brew in the autumn and winter .
 
K-97 is not a good yeast in any way. If you insist on making your Kolsch with an ale yeast, try S-04. Ignore feedback or instincts that suggest that S-04 is a bad yeast -- it's not, it's improved within the last 4 or 5 years, honest -- just try it! And if you are willing to try a lager yeast that ferments clean at non-cold temperatures, try S-189, Diamond, or M76.
 
I guess people get different results - I used K97 in my Kolsch recipe and it turned out great. 2 weeks primary at 18 degrees, 2 weeks cold in the fermenter, 2 weeks bottle conditioning at normal temperatures ie. not lagering, then kept them in the fridge until drinking.
