I have made some carrot wine, in a fermenting bucket for 2 weeks, racked into a demi john, and 2 weeks later still fermenting, how long to u think it needs before bottling. Just done a blackberry and apple wine, that has been in bucket for a week, racked and in demi John's, wandering how long it will take it stops fermenting. Thinking prior to bottling, a camden tablets, leave for a couple of days then finings, b4 bottling, your help would be appreciated
 
Just leave it a few months in a dark temperature stable place and forget about it.
This allows it to fully ferment out and mature and also off gas any co2 held in suspension.
All hedgerow and veggie wine benefit from a good 3-6 months at least before bottling, then another 3-6 months in the bottle before drinking

My carrot wine was started 19 April this year.
It's been racked four times, Campden tab added and de-gassed. Looks clear. No bubbles from air-lock.
Ready to bottle?
