Hey HBF,
I am Knox, I used to work as a professional brewer back in Denmark before making the grand decision of going back to Uni to get my degree in Brewing & Distilling Science at SETU, Ireland.
My background is in Production Technology and Management and I ended up in beer by sheer coincidence as I took on a project for a small brewery and that sparked my interested. I finished my diploma at Denmark's second largest brewery 'Royal Unibrew' before finding myself a brewer position at Bryghuset Møn, a regional brewery. I stayed in that position for about 3 years before taking on my newest challenge, getting my honors. My aim is to open up a brewery, but that is at least a decade down the pipedream.
Other then my professional background and goals I volunteer every summer at a medieval living museum in Denmark as their local brewmaster. Here I brew interpretations of beer from the 1400-1500 to the best of my ability with the historical treaties I can find. I also used to homebrew back in Denmark and I hope to start again here in Ireland, but my SO told me politely that the apartment is a no homebrew zone...
So I hope to find a homebrewer or homebrew club nearby who might have room for a jazzy Danish brewer to come by and make a few brews.
Oh! I am also on the American version of this forum where I primarily translated some Danish recipies from Danish to English. If anybody is interested I can share a link.
