I'm in need of being able to set my HLT temp and have it stay at a temp i want for my long, slow sparging. Ie 85C. My HLT is a 25L fv with a couple of elements in. Can anyone here give me an idea how i'd go about fitting a thermostat or the like. One that i can turn off when i need to boil water. The range would need to be from about 70C-90C.

Thoughts or pointers here would be greatfully recieved.

You could use a PID and SSR to drive one of the elements.
On my HLT I use 2 elements to get to target sparge liquor temp, then turn the element off that's not controlled by my PID/SSR combo. From that point on the HLT is maintained at the temp you've programmed into the PID.
For boiling purposes at the end of sparging you could just unplug the element from the PID box, and plug it straight into the mains as per the other element.
