    Given this some thought. I am not sure this is a protein rest at all. If we assume Mr Palmer knows what he is on about... This is a cooler extended beta amylase (only) rest. There is no denaturing in the 70's. This has piqued my interest, because it is quite "outside the box" imo

    A concentrated essence would work well. Glass test first. https://www.lovebrewing.co.uk/top-shelf-english-gin/ Equally what is the flavour you are after - juniper & coriander? Made a simple syrup and extract the flavour.

    Many happy days with ribena wine. Like you same the juice just isn't the same. Tasted Myo white a couple of weeks ago. It's good. With a few tweaks & a bit of practice it could be brilliant (for a white 🤣🤣🤣)

    You are better off adding sugar later. The yeast like a thinner start, and then there is a full house ready to receive your extra dose.
